How do I change the ticket state dropdown options, and set rights per option

How can I change the ticket state dropdown options as an admin, currently we have 'New' 'open' 'resolved' 'hold' 'invalid' which aren't that useful for a structured QA process.

Furthermore can this be changed per project so different projects have different ticket states? Or is it a one size fits all approach.

In addition can it be set that only certain users can set certain states - for example I require that only the QA manager can resolve/close a ticket, and that clients and develoeprs cannot.

    From the project overview, you can go to the edit page to update your project states. Yes, each project can have a different set of states. For instance, we use open => reviewing => deploying => resolved for our normal workflow.

    There is no ability to limit states according to user roles.
