how do I customize fields related to issue tracking?
For example, I would like to add a field which records a date when a fix was approved and a date when the management was notified of the resolution

Hi Vlad,
Lighthouse does not offer fields customization. The only fields available are the one you see. This is deliberate as we've always tried to keep Lighthouse simple.
