Custom ticket status
I know you can set custom status for tickets per project. is there a global setting somewhere.. so each new project will have the new custom ticket information?

Sorry for the delay in responding! No, there is no global setting for ticket states. We typically just copy and paste our preferred ticket states into the new project when we create it.
