Prioritisation
Is there a way of sorting tickets by priority?
Can I change the schema to make the tonal difference between High
and Medium more obvious?
If not, can you put these in the product backlog, please?

Yes, you should be able to sort tickets by priority using search, but we don't have column style sorting available. No, you can't customize the colors for the different priorities.
