Subject: How do I delete a user?
I noticed that can change permissions, but how do I delete a user that no longer works for us? Also, if he was assiged to the ticket, would it default the ticket to being assinged to no one?

Simply remove all the permission options and save, then the user will be removed.
The ticket data will still show the users name on that ticket, you will have to do a search for all their assigned tickets and do a bulk edit in order to change the details. That user will just not have access to the project anymore, so they can't see that stuff.
