Changing Permissions for Project User to only allow creating/editing tickets.

Currently I see that the user (even though I just assigned the permission to the project), is able to edit my project description, milestones, etc. Can't I set different levels of control within a project. Example for QA, developer, Client, etc

We don't have that level of control in Lighthouse. It's intentionally simple. If you don't trust your users, don't invite them.

It is actually not about trust - Its about User Experience for people like my QA or the Clients who test the app and do not need to see the functions that they would never intend to use. Anyways I could ask my clients to use the email address to report issues. Don't want to go against the motto here "If you don't trust the users, don't invite them" haha
